  • 2 tsp Sichuan Peppercorns (alternative: Black Peppercorns)
  • 5-6 Staranise (whole)
  • 0.5 tsp cloves (ground)
  • 1 tbsp Chinese Cinnamon (Cassia) (ground) (alternative: Cinnamon)
  • 1 tbsp Fennel Seeds (ground)

  • In a dry skillet or wok, roast the peppercorns over low to medium heat, until the aroma of the peppercorns is released. This will take about 3 minutes.
  • Grind the toasted peppercorns and star anise using the mortal and pestle.
  • (optional) Pass the blended mixture you just ground through a fine mesh strainer, for a more even consistency
  • Mix in the ground cloves, cinnamon and fennel seeds.
  • Place mixture back in mortar and peslte and grind until very fine.
  • Store in airtight container, and keep in a dark cool space.
