- 1 (red) onion / shallot
- 1 garlic clove
- 15g flour
- 15g butter
- 1-2 tsp japanese soy sauce
- 1 tsp mustard
- 0.25 cube of bouillon
- 75-100ml (hot) water
- Finely chop the garlic and onion.
- Put a saucepan on medium heat.
- Melt the butter and wait until the big bubbles have resided.
- Add the chopped onion, and fry it until it starts to glaze.
- Add the garlic and stir for about one minute.
- Add the flour and make sure it is completely mixed in with the butter.
- Let this simmer, while regularly whisking it, such that it does not stick/burn to the pan.
- Wait until the mixture starts to and turn slightly brown and smells a bit like cookies. This means the flour is cooked.
- Take the pan of the heat, add the mustard and soy sauce, and whisk it through.
- Add the bouillon, and a small amount of water and also whisk this through.
- Now put the pan back on the heat.
- Now gently keep adding small amounts of water, and whisking it through completely, until it has the preferred consistency.
- Once done, you can leave it on a low heat to keep it warm.
